Savory taco ranch soup with seasoned ground beef, tomatoes, green chilies, kidney beans, and hominy. Top with sour cream and cheese.
Ingredients:
  • 1.5 pounds lean ground beef
  • 1 onion, chopped
  • 2 (10 ounce) cans diced tomatoes with green chile peppers
  • 1 (15 ounce) can kidney beans, drained
  • 1 (15 ounce) can white hominy, drained
  • 1 (1.25 ounce) package taco seasoning mix
  • 1 (1 ounce) package ranch dressing mix
  • 0.25 cup shredded Cheddar cheese
  • 0.25 cup sour cream
  • 1.5 cups water
Instructions:
  • Brown ground beef or turkey along with chopped onion in a Dutch oven, stirring frequently until beef is cooked. Drain excess grease from the pan.
  • Combine canned tomatoes, kidney beans, hominy, taco seasoning, and ranch salad dressing mix in a pot. Stir well and simmer gently for two hours. Add 1 to 2 cups of water as needed to achieve your preferred soup consistency.
  • Serve the soup in bowls and top with shredded Cheddar cheese and a dollop of sour cream, if desired.
