Marinate flank steak strips in zesty orange and lime juice, then grill to juicy perfection for irresistible tacos de carne asada.
Ingredients:
  • 1 jalapeno pepper, seeded and minced
  • 3 cloves garlic, minced
  • 1 teaspoon kosher salt
  • 1 teaspoon fresh ground black pepper
  • 0.5 cup olive oil
  • 2 limes, juiced
  • 2 tablespoons white vinegar
  • 2 pounds flank steak, trimmed of fat
  • salt and ground black pepper to taste
Instructions:
  • In a mortar, transform jalapeno, garlic, kosher salt, and 1 teaspoon black pepper into a flavorful paste.
  • Combine lime juice, orange juice, and vinegar in a glass bottle or lidded container. Shake well after adding the garlic mixture. Place steak in a shallow bowl and pour the marinade over it. Cover with plastic wrap and refrigerate for 4 to 6 hours until the steak absorbs the flavors.
  • Preheat the grill to medium heat and brush the grate with a light coating of oil.
  • Take the steak out of the marinade and transfer it to a cutting board. Season the steak with salt and pepper, then cut it into thin strips against the grain.
  • Cook the food until it has a slight char and is pale pink in the middle, approximately 5 minutes on each side.
