Impress guests with this easy, freezer-friendly bean salad-perfect for parties or quick meals.
Ingredients:
  • 0.75 cup white sugar
  • 0.66666668653488 cup white vinegar
  • 0.33333334326744 cup canola oil
  • 0.25 teaspoon freshly ground black pepper, or more to taste
  • 1 (19 ounce) can dark red kidney beans, rinsed and drained
  • 1 (14.5 ounce) can wax beans, drained
  • 1 (14.5 ounce) can cut green beans, drained
  • 1 cup diced green bell pepper
  • 4 medium green onions, cut into 1/4-inch pieces
Instructions:
  • In a saucepan, mix together sugar, vinegar, oil, and pepper to make the sauce. Cook over gentle heat, stirring occasionally until the sugar dissolves, about 3 to 5 minutes. Take off the heat and allow it to cool for a bit.
  • Combine kidney beans, wax beans, green beans, bell pepper, and green onions in a large bowl while the sauce cools.
  • Drizzle the slightly cooled sauce over the veggies and mix well to ensure they're coated. Cover with plastic wrap and let marinate in the refrigerator for at least 12 hours before serving or freezing. Remember to stir occasionally if you can. When ready to serve, use a slotted spoon to enjoy.
