Make-ahead turkey gravy with flavorful roasted turkey wings for a stress-free Thanksgiving!
Ingredients:
  • 6 large turkey wings
  • 2 medium onions, peeled and quartered
  • 1 cup water
  • 8 cups chicken broth, divided
  • 0.75 cup chopped carrots
  • 0.5 teaspoon dried thyme
  • 0.75 cup all-purpose flour
  • 2 tablespoons butter
Instructions:
  • Assemble all ingredients needed for the recipe.
  • Preheat the oven to 400°F (200°C) for a perfect bake.
  • Place the turkey wings in a large roasting pan in a single layer and sprinkle onions on top.
  • Roast the wings in the preheated oven until they turn a beautiful golden brown, approximately 1 hour and 15 minutes.
  • Place the wings and onions into a 5-quart stockpot.
  • Pour water into the roasting pan and stir well, making sure to deglaze the pan by scraping up any browned bits.
  • Add the water and pan scrapings to the stockpot for extra flavor depth.
  • Pour in 6 cups of flavorful chicken broth, along with the vibrant carrots and aromatic thyme. Place over medium-high heat until it reaches a vigorous boil.
  • Lower the heat to medium-low and let it simmer without a lid for 1 1/2 hours.
  • Move the wings to a cutting board and allow them to cool until easy to handle. Remove the skin and separate the meat. Dispose of the skin and save the meat for later use.
  • Strain the contents of the stockpot into a 3-quart saucepan using a large strainer. Press on the vegetables in the strainer to get out all the liquid; then discard the vegetables.
  • Remove and discard any excess fat from the turkey broth, then bring it to a gentle boil.
  • Whisk the flour into the remaining 2 cups of chicken broth in a bowl until it forms a smooth mixture.
  • Gradually add the flour mixture to the simmering turkey broth while whisking. Simmer until the gravy thickens, about 3 to 4 minutes, then mix in the butter and pepper.
  • Enjoy right away or transfer to containers, allow to cool, and store in the refrigerator or freezer.
