Prepare herb-infused creamy turkey casserole ahead with a touch of sherry for convenience.
Ingredients:
  • 8 oz. uncooked spaghetti
  • 1/4 cup margarine or butter
  • 2 cups sliced fresh mushrooms
  • 3 tablespoons Gold Medal™ all-purpose flour
  • 2 cups Progresso™ chicken broth
  • 3/4 cup half-and-half
  • 1 to 3 tablespoons dry sherry, if desired
  • 1/4 cup chopped fresh parsley
  • 1/8 teaspoon nutmeg
  • Dash pepper
  • 3 cups cubed cooked turkey
  • 1/2 cup grated Parmesan cheese
Instructions:
  • Prepare the spaghetti according to the package instructions, then drain.
  • Melt the margarine in a Dutch oven over medium heat. Cook the mushrooms for 5 minutes until tender, stirring often. Lower the heat to medium-low. Stir in the flour and cook until bubbly. Slowly pour in the broth while stirring continuously until the mixture boils and thickens. Remove from heat and mix in the half-and-half, sherry, 1/4 cup parsley, salt, nutmeg, and pepper.
  • Combine the cooked spaghetti and turkey with the mushroom mixture, gently stirring to combine. Transfer the mixture to a 13x9-inch (3-quart) glass baking dish without greasing it. Cover the dish with foil and refrigerate for at least 8 hours or overnight.
  • Preheat oven to 350°F. Uncover baking dish and sprinkle Parmesan cheese on top. Bake for 45 to 55 minutes until thoroughly heated, removing foil for the last 10 minutes. Finish by sprinkling with parsley.
