Rich Make-Ahead Turkey Gravy

Prepare flavorful turkey gravy base in advance, freeze or refrigerate. Reheat, mix with pan drippings before serving.
Ingredients:
  • 3 pounds turkey wings
  • 2 small onions, quartered
  • 2 stalks celery, each cut into 4 pieces
  • 2 carrots, each cut into 4 pieces
  • 2 cloves garlic, halved
  • 1.5 cups dry white wine
  • 4 cups chicken broth
  • 4 cups water
  • 0.25 teaspoon dried thyme
  • 2 tablespoons butter, or more if needed
  • 0.5 cup all-purpose flour
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C).
  • In a roasting pan, combine turkey wings, onions, celery, carrots, and garlic. Roast until the wings are a deep golden brown, around 1 hour and 15 minutes. Transfer the cooked wings and veggies to a large pot. Deglaze the roasting pan on two stove burners with white wine over medium-high heat, scraping the flavorful browned bits until reduced to 1/2 cup. Add this wine reduction to the pot with the turkey wings.
  • Combine chicken broth, water, and thyme in a pot. Add turkey wings and bring to a boil. Reduce heat and simmer for 45 minutes, skimming off any foam. Strain the mixture into a bowl, reserving the meat from the wings if desired. Let the gravy base rest, skim off the fat, and transfer it to a saucepan. Adjust the fat amount to reach 1/2 cup, adding butter if needed.
  • In a saucepan over medium heat, combine flour with turkey fat and whisk until smooth and golden brown. Slowly whisk in broth until the gravy boils and thickens. Season with salt and pepper to taste. Let the gravy cool, then refrigerate or freeze. Reheat until almost boiling before serving.
