Make-ahead baked French toast with blackberry jam and rich egg custard for a special breakfast.
Ingredients:
  • 1 cup blackberry jam
  • 1 loaf (12 oz) French bread, cut into 1 1/2-inch cubes
  • 1 package (8 oz) 1/3-less-fat cream cheese (Neufchâtel), cut into 1-inch cubes
  • 4 eggs
  • 1 teaspoon ground cinnamon
  • 1/2 cup packed brown sugar
  • Real maple or maple-flavored syrup, if desired
Instructions:
  • Cook the jam in a small saucepan over medium heat for 1 to 2 minutes, stirring occasionally, until it is melted and smooth.
  • Grease a 13x9-inch glass baking dish generously with cooking spray. Layer half of the bread cubes in the dish, followed by the cream cheese cubes, drizzled with melted jam, and then top with the remaining bread cubes.
  • In a medium bowl, whisk together eggs, half-and-half, cinnamon, and vanilla. Pour the mixture over the bread and sprinkle with brown sugar. Cover tightly and refrigerate for at least 8 hours, but no longer than 24 hours.
  • Preheat your oven to 325°F. Bake the French toast covered for 20 minutes. Then, uncover and bake for an additional 10 to 15 minutes until it's set and has a golden brown color. Serve with syrup and whipped cream.
