Elevate your Chinese New Year with a prosperous salad toss using chopsticks!
Ingredients:
  • 40.00 ml rice wine vinegar
  • 5.00 gm caster sugar
  • 1.20 gm salt
  • 500.00 ml finely shredded red cabbage
  • Peanut oil, for shallow-frying
  • 6 wonton wrappers, each cut into 4 triangles
  • 24 cooked tiger prawns, peeled (tails intact), deveined
  • 150g daikon radish, cut into long matchsticks
  • 1 carrot, cut into long matchsticks
  • 82.50 ml thinly sliced pickled ginger
  • 2 Lebanese cucumbers, seeded, cut into long thin matchsticks
  • 250.00 ml fresh round mint
  • 80.63 gm plum sauce
  • 28.60 gm honey
  • 20.00 ml rice wine vinegar
  • 42.00 gm lemon juice
  • 21.00 gm soy sauce
Instructions:
  • In a medium bowl, mix together vinegar, sugar, and salt. Add cabbage and toss until combined. Let it sit for 5 minutes until the cabbage becomes vibrant in color and slightly softens. Drain excess liquid before serving.
  • Heat oil in a large saucepan over medium-high heat. Shallow-fry wonton pieces in batches until golden and crisp, about 15 seconds per side. Drain on paper towel.
  • Prepare a delicious honey plum dressing by simply mixing the ingredients in a small jug.
  • On a large platter, artistically place cabbage, fried wontons, prawns, radish, carrot, ginger, cucumber, and mint. Generously drizzle with dressing before serving.
