Tropical fruit salad with creamy coconut rum dressing for a boozy twist.
Ingredients:
  • 1 cantaloupe - peeled, seeded, and cubed
  • 1 honeydew melon - peeled, seeded, and cubed
  • 4 large fresh peaches - peeled, pitted, and sliced
  • 3 oranges, peeled and sliced
  • 3 cups sliced fresh strawberries
  • 2 large mangoes - peeled, seeded, and chopped
  • 4 kiwis, peeled and sliced
  • 1 pint blueberries
  • 1 pint fresh raspberries
  • 1 cup heavy whipping cream
  • 0.5 cup confectioners' sugar
  • 0.5 cup coconut-flavored rum (such as Malibu®)
  • 1 cup miniature marshmallows
  • 0.5 cup shredded coconut
Instructions:
  • Mix an array of vibrant fruits including cantaloupe, honeydew melon, peaches, oranges, strawberries, mangoes, kiwis, blueberries, and raspberries in a spacious bowl.
  • In a bowl, gently mix cream, confectioners' sugar, and rum until smooth, then gently stir in marshmallows. Pour this creamy mixture over the fruit and mix well. Cover and refrigerate, stirring occasionally, until chilled and flavor has infused, 8 hours to overnight.
  • Serve the fruit salad in individual bowls and top with a sprinkle of coconut for added flavor and texture.
