Ingredients:
  • 130g butter
  • 50g golden syrup
  • 50g dark chocolate
  • 50g cocoa powder
  • 220g digestive biscuits, coarsely broken
  • 250g Maltesers, 1/2 crushed and 1/2 left whole
  • 50g chocolate, melted
  • 50g thickened cream
Instructions:
  • Combine the butter and golden syrup in a large, heavy-based saucepan and melt together. Stir in the chocolate continuously.
  • - When the dark, sticky liquid is ready, add the broken digestives, cocoa powder, and broken Maltesers. Stir well to coat all dry ingredients with the sticky mixture. Let it cool a bit before adding the whole Maltesers.
  • Place a layer of cling film in the cake tin, gently press the mixture into the tin ensuring the whole Maltesers stay intact.
  • Place the dish in the freezer to firm up while you prepare the ganache, creating a solid foundation for adding the topping later.
  • Melt the remaining 50g of chocolate and whip the cream until smooth. Gradually pour a small amount of cream into the melted chocolate to create a smooth consistency. This will be the delicious ganache topping for your dish.
  • Remove the cake from the freezer and spread the ganache topping evenly.
