Delicious mandarin and strawberry muesli desserts - perfect for dessert or brunch!
Ingredients:
  • 60ml (1/4 cup) water
  • 55g (1/4 cup) caster sugar
  • 4 mandarins, peeled, segmented
  • 1 x 250g punnet strawberries, hulled, washed, dried, quartered
  • 120g (1 cup) natural muesli
  • 28.60 gm honey
Instructions:
  • Preheat oven to 180°C. In a saucepan over low heat, dissolve sugar in water for about 3 minutes. Increase heat to medium, bring to a boil, then add mandarin and strawberry. Stir occasionally and cook for 2 minutes until heated through.
  • Divide the mandarin mixture evenly among four 125ml (1/2 cup) ramekins or ovenproof dishes, then arrange them on a baking tray.
  • In a bowl, mix muesli and honey. Sprinkle the mandarin mixture with the muesli mixture. Bake in a preheated oven for 10-15 minutes or until the muesli is toasted. Serve immediately after removing from the oven.
