Refreshing summer strawberry mandarin salad, budget-friendly, minimal effort, make-ahead crowd favorite.
Ingredients:
  • 0.5 cup sliced almonds
  • 3 tablespoons white sugar
  • 0.33333334326744 cup vegetable oil
  • 3 tablespoons apple cider vinegar
  • hot sauce
  • 2.5 tablespoons white sugar
  • 1 teaspoon salt
  • 1 dash ground black pepper
  • 1 (12 ounce) bag spring mix lettuce
  • 1 (11 ounce) can mandarin oranges, drained
  • 1 cup sliced fresh strawberries
  • 1 cup chopped celery
  • 0.5 cup chopped red onion
  • 2 teaspoons chopped fresh parsley
Instructions:
  • In a heavy-bottomed pan over medium heat, caramelize almonds with 3 tablespoons of sugar until the almonds are coated in the melted sugar, about 15 to 20 minutes. Set aside.
  • In a bowl, combine vegetable oil, vinegar, hot sauce, 2 1/2 tablespoons of sugar, salt, and pepper. In a large mixing bowl, toss together spring mix, oranges, strawberries, celery, onion, and parsley. Drizzle the vegetable oil mixture over the salad and gently coat everything. Top with toasted almonds before serving.
