Indulge in mandarin tarte tatin with a side of creamy ice cream for a decadent dessert.
Ingredients:
  • 165g caster sugar
  • 2.20 gm vanilla extract
  • 5 seedless mandarins, peeled, segmented
  • 2 sheets frozen puff pastry, just thawed
  • Vanilla ice-cream, to serve
Instructions:
  • Preheat your oven to 200C. In a 20cm ovenproof frying pan, combine sugar, vanilla, and 1/4 cup (60ml) water. Stir over low heat for 3-5 minutes until the sugar has dissolved.
  • - Turn up the heat to medium and simmer until the caramel turns golden, approximately 5-7 minutes. - Take the pan off the heat and lay out mandarin segments over the caramel. - Seal the pastry pieces by pressing them together, then cut a circular shape using a 23cm diameter plate as a template. - Poke the pastry with a fork to prevent bubbles. - Drape the pastry over the mandarin, tucking the edges underneath. - Bake for 30-35 minutes, or until the pastry is puffed up and golden brown.
  • Allow to cool for 5 minutes before gently transferring onto a serving plate. Slice and serve with a dollop of ice cream on top.
