Tropical twist on a classic dish with coconut and mango.
Ingredients:
  • 3 granny smith apples, peeled, cored, sliced
  • 0.63 gm ground nutmeg
  • 90g rolled oats
  • 55g plain flour
  • 32.00 gm brown sugar
  • 20.00 gm ground cinnamon
  • 18.40 gm canola oil
  • 20g shredded coconut
  • 55g cashew
  • 425g can sliced mango, drained, cut into strips lengthways
  • Ice cream or yoghurt, to serve
Instructions:
  • Preheat your oven to 180°C. Toss apples with nutmeg in a 1.5L ovenproof dish and bake for 15 minutes. Let cool.
  • In a food processor, quickly blend oats, flour, sugar, cinnamon, and oil for 5 seconds. Gently mix in the coconut and cashews.
  • Layer the mango between the apple slices, ensuring even distribution. Sprinkle the crumble mixture on top evenly. Bake for 30 minutes or until golden brown. Serve warm or cold with a side of ice cream or yogurt.
