Mango and coconut sorbet

"Simple and irresistible dairy-free sorbet with just 6 ingredients."
Ingredients:
  • 500g box frozen chopped mango (see note)
  • 270ml can coconut cream
  • 21.00 gm lime juice
  • 40.00 gm caster sugar
  • 2 limes
Instructions:
  • Blend mango, coconut cream, lime juice, and sugar in a food processor until silky. Transfer the mixture into a 6cm-deep, 9cm x 19cm loaf pan. Cover with plastic wrap and freeze overnight or until solid.
  • Prepare the Candied Lime Rind by thinly slicing lime rinds after removing any white pith. Cook sugar and water in a pan until sugar dissolves. Add lime rind and boil until syrup thickens and rind is tender. Transfer rind to a baking paper-lined plate to cool.
  • Serve the sorbet in elegant glasses and garnish with the zesty candied lime rind. Enjoy promptly.
