Mango and passionfruit syrup

Capture the essence of summer with passionfruit and mango syrup.
Ingredients:
  • 480g mango
  • 268.75 gm caster sugar
  • 6 passionfruit, halved
Instructions:
  • In a medium saucepan over gentle heat, combine mango, sugar, and 1 1/2 cups of cold water. Stir continuously for 5 minutes until the sugar completely dissolves.
  • Crank up the heat to high until it boils, then lower to medium-low and let it simmer for 25 to 30 minutes until slightly thickened. Allow it to cool.
  • Pass the mixture through a fine sieve into a jug to remove any solids. Add passionfruit pulp and refrigerate until chilled, about 30 minutes.
