Indulge in a comforting treat with mango and pistachio tea cakes.
Ingredients:
  • 140g pistachios
  • 225.00 gm icing sugar, plus extra to dust
  • 125.00 ml plain flour
  • 6 egg whites
  • 185g butter, melted, cooled
  • 1/2 mango, thinly sliced
Instructions:
  • Preheat your oven to 200°C or 180°C fan and generously grease a 10-hole, 1/2 cup friand pan. Grind pistachios in a small food processor until fine. Combine with sifted icing sugar and flour in a bowl.
  • Whisk egg whites in a large bowl until frothy using a fork. Add butter and pistachio mixture, gently stirring until just combined.
  • Pour batter into prepared pans. Arrange mango slices on top and bake for 25-30 minutes or until set. Allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely. Sprinkle with icing sugar before serving.
