Mango chicken pappadums

Indian-spiced pappadum bites - a flavor-packed party favorite.
Ingredients:
  • 2 single chicken breast fillets
  • 49.60 gm tandoori curry paste
  • 4.60 gm vegetable oil
  • 14 plain mini pappadums
  • 1 Honey Gold mango, peeled, cut into 1cm pieces
  • 1 small Lebanese cucumber, cut into 1cm pieces
  • 40.00 ml finely chopped red onion
  • 20.00 ml chopped fresh coriander
  • 15.90 gm fresh lime juice
  • 130g (1/2 cup) natural yoghurt
  • 20.00 ml chopped fresh mint
  • 1 garlic clove, crushed
  • Fresh coriander sprigs, to serve
Instructions:
  • Coat the chicken with curry paste in a glass or ceramic bowl.
  • In a non-stick pan, heat oil over medium heat. Cook chicken for 7 minutes on each side. Allow it to cool before shredding.
  • Cook the pappadums according to the instructions on the packet.
  • In a bowl, mix together the mango, cucumber, onion, chopped coriander, and one-third of the lime juice. Season with salt and pepper to taste.
  • In a small bowl, mix together the yogurt, fresh mint, minced garlic, and the rest of the lime juice. Season with salt and pepper to taste.
  • Arrange the pappadums on a platter, then layer them with chicken, mango mixture, yogurt mixture, and fresh coriander sprigs before serving.
