Mango Chile Chicken Tenders

"Spicy Thai chili paste enhances the flavor of tender mango dish."
Ingredients:
  • 1/4 cup Thai chili garlic paste
  • 1 cup Progresso™ plain panko crispy bread crumbs
  • 1 package (14 oz) uncooked chicken tenders (not breaded)
  • 1 cup mango slices, chopped (from 20-oz jar)
  • 2 to 3 teaspoons Thai chili garlic paste
  • 1 tablespoon chopped fresh cilantro
Instructions:
  • Preheat oven to 400°F and generously coat a large cookie sheet with cooking spray.
  • Place 1/4 cup of chile paste in a small bowl. Then, take a large resealable plastic bag and add the bread crumbs. Dip the chicken into the chile paste, then transfer it to the bag with bread crumbs. Seal the bag and shake it to coat the chicken. Finally, place the coated chicken on a cookie sheet.
  • Bake for 15 to 20 minutes, flipping halfway through, until the chicken is cooked through and the bread crumbs are golden brown. While the chicken is baking, combine chopped mango, 2 to 3 teaspoons of chile paste, and cilantro in a medium bowl. Serve the mango salsa along with the chicken.
