Delicious mango chutney with fresh mango, raisins, ginger, spices, and more. Perfect for canning!
Ingredients:
  • 6 cups white sugar
  • 6 cups brown sugar
  • 3 cups distilled white vinegar
  • 5 small red hot chile peppers, seeded and chopped
  • 4 teaspoons ground allspice
  • 2 teaspoons ground ginger
  • 2 teaspoons ground nutmeg
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon kosher salt
  • 2 large onions, chopped
  • 1 cup golden raisins
  • 1 cup raisins
  • 0.5 cup fresh ginger root, chopped
  • 3 cloves garlic, chopped
  • 16 cups sliced, semi-ripe mangos
  • 0.5 cup sliced almonds
Instructions:
  • Assemble all the ingredients.
  • In a large saucepan, mix together white sugar, brown sugar, vinegar, chile peppers, allspice, ground ginger, nutmeg, cinnamon, cloves, and salt. Bring to a boil and simmer for 30 minutes.
  • Add the onions, golden raisins, regular raisins, fresh ginger, and garlic to the mixture and simmer for an additional 30 minutes.
  • Gently fold in ripe mangos (and optional almonds); lower the heat and let it simmer for 30 minutes.
  • Spoon chutney into freshly sterilized jars, leaving a 1/4 inch space at the top.
  • Ensure each jar is perfectly sealed by gently sliding a sharp knife or a slim spatula along the edges to release any trapped air. Keep the jars pristine by using a damp paper towel to wipe the rims clean. Complete the process by firmly securing the lids with the screw rings.
