Easy tangy mango chutney to elevate your chicken, pork, or lamb dishes.
Ingredients:
  • 2 cups sugar
  • 1 cup distilled white vinegar
  • 3 1/2 pounds mangoes
  • 1 medium onion
  • 1/2 cup golden raisins
  • 1/4 cup crystallized ginger
  • 1 garlic clove
  • 1 teaspoon mustard seeds
  • 1/4 teaspoon red chili pepper flakes
Instructions:
  • Create a delightful sugar vinegar syrup by combining sugar and vinegar in a 6-quart pot. Boil the mixture while stirring until the sugar completely dissolves.
  • Combine all remaining ingredients in the pot and let them simmer, uncovered, for 45 minutes to 1 hour until the mixture becomes syrupy and slightly thickened. Remember to stir occasionally while it cooks.
  • Transfer to jars: Fill sterilized, warm jars, leaving a 1/2-inch space at the top. Seal the jars without over-tightening the lids.
  • For preserving, use a water bath canner: Place a rack at the bottom of a large pot. Arrange sealed jars on the rack, ensuring they are covered by 1 inch of water.
