Tropical mango cobbler: a buttery, moist twist on a classic treat.
Ingredients:
  • 0.5 cup melted butter
  • 2 ripe mangoes - peeled, pitted, and sliced
  • 0.5 cup white sugar
  • 2 tablespoons peach schnapps
  • 1 cup all-purpose flour
  • 0.75 cup white sugar
  • 2 teaspoons baking powder
  • 0.25 teaspoon salt
  • 1 pinch ground nutmeg
  • 0.75 cup milk
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and pour melted butter into an 8-inch square baking dish.
  • Combine diced mangoes, 1/2 cup sugar, and peach schnapps in a bowl. Arrange mango slices over the butter in the baking dish and drizzle any remaining juice over the top.
  • Combine flour, 3/4 cup sugar, baking powder, salt, and nutmeg in a bowl. Pour in the milk and stir until batter is smooth.
  • Evenly distribute the batter over the mango in the baking dish.
  • Bake in the preheated oven for 45-50 minutes until the top layer is beautifully golden brown. Allow to rest for about 5 minutes before serving.
