Spicy mango-habanero wings: Crispy fried wings coated in a tangy, fiery sauce of mango nectar, garlic, Sriracha, and habanero. Perfect for any party!
Ingredients:
  • 30 chicken wing sections
  • 1 (12 ounce) can mango nectar
  • 0.25 cup brown sugar
  • 6 habanero peppers, stemmed
  • 2 tablespoons soy sauce
  • 1 tablespoon Sriracha sauce
  • 1 tablespoon rice vinegar
  • 0.5 cup butter
  • 3 cloves garlic, minced
  • 2 tablespoons honey
  • 1 cup cornstarch
  • 2 cups vegetable oil for frying
Instructions:
  • Wash the chicken wings and gently dry with paper towels. Arrange on a baking sheet, cover, and chill while preparing the sauce.
  • Combine mango nectar, brown sugar, habanero peppers, soy sauce, Sriracha, and vinegar in a food processor and blend until smooth (habanero seeds will still be visible). Be cautious when removing the food processor lid, as the pepper fumes can be intense.
  • In a saucepan, melt butter over medium heat. Saute garlic until fragrant for about 30 seconds. Quickly stir in mango-habanero mixture and bring to a simmer, stirring often. Lower the heat and mix in honey. Simmer until the sauce is reduced by 75% and turns into a glaze, stirring occasionally, for 45 minutes to 1 hour.
  • As the sauce simmers, preheat the oven to 200°F (95°C) with a rimmed baking sheet inside. Heat oil in a deep fryer to 350°F (175°C) and place cornstarch in a sealed plastic bag.
  • Take the wings out of the refrigerator and gently coat them in cornstarch in small batches. Arrange them in a single layer on a plate.
  • Fry 5 to 6 wings in hot oil until they are golden brown and crispy, which should take about 8 minutes. Place them on a paper towel to drain, then transfer them to a baking sheet in the preheated oven to stay warm while you fry the rest of the batches.
  • Transfer the wings from the oven to a spacious bowl. Drizzle half of the hot sauce over them and toss to coat. Gradually add more sauce until the wings are perfectly coated to your preference.
