Spicy mango salsa with roasted habanero peppers. Perfect with crunchy chips!
Ingredients:
  • 1 habanero pepper
  • 0.5 mango - peeled, seeded, and cubed
  • 0.33333334326744 large sweet onion, cut into 1/2-inch slices
  • 1 tablespoon vegetable oil, or more as needed
  • 1 clove garlic
  • 0.25 cup fresh cilantro, or to taste
  • 1 tablespoon lime juice
  • ground black pepper to taste
  • 1 pinch ground cumin, or to taste
Instructions:
  • Preheat oven to 425°F (220°C) for a perfectly heated cooking environment.
  • Spread the habanero pepper, mango, and onion on a baking sheet. Generously drizzle with olive oil and toss until everything is evenly coated.
  • Roast on the middle rack in a preheated oven for 10 minutes. Switch on the broiler and roast for an additional 5 minutes. Move baking pan to the top shelf of the oven; broil until onion and mango start to brown and habanero pepper blisters, approximately 3 more minutes. Remove and let cool slightly.
  • With gloves on, discard habanero pepper stem. Put pepper in a small food processor or blender along with mango, onion, garlic, cilantro, lime juice, salt, black pepper, and cumin. Pulse until salsa is slightly chunky and well combined. Refrigerate for 2 hours to blend flavors before serving.
