Mango ice-cream

Experience exotic Indochine flavors in every bite of this fruity and aromatic ice cream dessert.
Ingredients:
  • 300ml thickened light cream
  • 250ml (1 cup) skim milk
  • 8 cardamom pods, crushed
  • 800g can sliced mango, drained
  • 400g can sweetened condensed milk
  • Tropical fruit, to serve
Instructions:
  • Prepare your loaf pan by lining it with two layers of plastic wrap, making sure the sides hang over. In a saucepan, mix together the cream, milk, and cardamom. Heat the mixture over medium-high heat until it simmers. Take it off the heat and let it sit for 30 minutes to infuse the flavors.
  • Next, blend the mango in a food processor until it becomes smooth.
  • Pour the cream mixture through a sieve into a small bowl, press the cardamom pods with the back of a spoon. Stir in the condensed milk. Beat using an electric mixer for about 15 minutes until slightly thickened. Gently fold in the mango. Transfer the mixture into the pan, cover with plastic wrap, and freeze overnight until firm.
  • Take the ice-cream out of the freezer 10 minutes before serving on a platter. Unwrap and discard the plastic. Finish by topping with tropical fruit.
