Mango passion ice-cream

Make homemade ice cream sandwiches easily.
Ingredients:
  • 2 litres vanilla ice-cream
  • 2 large mangoes, roughly chopped
  • 3 passionfruit, strained
  • 40g packet roasted coconut chips
  • 24 milk chocolate wheaten biscuits
Instructions:
  • Transfer the ice-cream into a spacious bowl, keeping the tub aside. Allow it to soften for 10 minutes without melting.
  • In a small food processor or blender, blend the mango until smooth. Mix the mango, passionfruit pulp, and coconut into the ice-cream. Transfer the mixture back to the tub, cover the surface with plastic wrap, then the lid. Freeze for 6 hours or until firm.
  • Arrange half of the biscuits with their plain sides facing up on a board. Add a scoop of ice cream on top of each biscuit. Place the remaining biscuits, chocolate-side up, on top to create sandwiches. Enjoy immediately or freeze for up to one month.
