Mango sorbet with fresh mango

Ingredients:
  • 110g (1/2 cup) sugar
  • 125mls (1/2 cup) water
  • 4 large ripe mangoes
  • 60mls (1/4 cup) fresh lemon juice
  • 2 egg whites
  • 15g (1/4 cup) shredded coconut, toasted, to serve
  • 3 mangoes, extra, peeled, sliced, to serve
Instructions:
  • In a small saucepan, stir together sugar and water over medium heat until sugar dissolves. Bring to a boil, then cool mixture off heat.
  • Peel and dice the mangoes. Blend the mango flesh until smooth. Mix in the cooled sugar syrup and lemon juice until fully incorporated.
  • Spread the mixture into a shallow metal tray and freeze until nearly firm. Transfer the partially frozen sorbet into a food processor, and blend with the egg whites until smooth. Refreeze until solid. Serve scoops of sorbet topped with toasted coconut and sliced mango.
