Mango sorbet

Ingredients:
  • 250mls (1 cup) fresh orange juice
  • 60mls (1/4. cup) fresh lemon juice
  • 55g (1/4 cup) sugar
  • 3 medium mangoes, peeled, flesh sliced
Instructions:
  • In a medium saucepan, combine the orange juice, lemon juice, and sugar. Bring to a boil over medium heat, then simmer on low for 3 minutes. Allow it to cool before using.
  • In a food processor or blender, blend the mango flesh with the cooled orange syrup until smooth. Transfer the mixture to a metal or plastic container, cover, and freeze for about 2 hours, or until it's nearly set.
  • Take the mango sorbet out of the freezer and gently break it up with a metal spoon. Put the broken sorbet into a food processor and pulse briefly until smooth and icy. Return the sorbet to its container and freeze for an additional 2-3 hours until firm.
  • Let the sorbet sit in the fridge for 10 minutes before serving to soften slightly. Scoop into glasses or dishes and enjoy right away.
