Mango sorbet

Indulge in homemade mango sorbet, a perfect summer treat in just 3 steps. Your family will love it!
Ingredients:
  • 165g caster sugar
  • 4 medium mangoes, flesh removed, peeled
  • 1 egg white
Instructions:
  • Combine sugar and 1 1/2 cups (375ml) water in a small saucepan over low heat, stirring until sugar is dissolved. Increase heat to high and bring to a boil. Let it cook without stirring for 5 minutes. Allow to cool to room temperature.
  • Puree the mango in a food processor until smooth. Transfer the mixture to a stainless steel bowl and mix in the cooled syrup. Cover with plastic wrap and freeze, stirring occasionally with a fork for 2 hours.
  • Beat the egg white with an electric beater until soft peaks form, then gently fold it into the mango mixture. Freeze for 3 hours until just frozen. Process in a food processor until smooth. Return the mixture to the pan and freeze for another 3 hours or until firm.
