Ingredients:
  • 2 mangoes, peeled, cut into 2cm cubes
  • 125g white marshmallows
  • 1 sheet reduced-fat puff pastry
  • low-fat sorbet, to serve
Instructions:
  • Preheat the oven to 200°C and prepare a 22cm cake pan by greasing and lining the base.
  • Layer the mangoes on the bottom of the cake pan and sprinkle generously with marshmallows.
  • Place the pastry over the marshmallows and neatly trim the edges for a perfectly polished finish.
  • Bake until golden, about 25-30 minutes. Let it stand for 5 minutes before serving.
  • Slice the dish into wedges and present alongside a scoop of refreshing sorbet.
