Easy summer tart with fresh mango, blackberries, and just a hint of sugar for a stunning yet simple dessert.
Ingredients:
  • cooking spray
  • 1 (9 inch) refrigerated pie crust
  • 1 cup white sugar
  • 1 cup mango puree
  • 0.25 cup butter, melted
  • 1 (6 ounce) container fresh blackberries
Instructions:
  • - Preheat the oven to 425 degrees F (220 degrees C). - Grease a pie pan with cooking spray. - Line the pan with pie crust, trimming the edges to fit.
  • Fill a saucepan halfway with water and bring it to a gentle simmer. Combine sugar and eggs in a heatproof bowl placed over the simmering water. Stir in mango puree, melted butter, and lemon juice. Cook, stirring often, until the mixture is smooth and thickened, approximately 15 minutes.
  • Transfer the filling from the heat to the prepared pie crust. Allow it to sit for 5 minutes, then evenly place blackberries on top of the mango mixture.
  • Bake in the preheated oven for 15 to 20 minutes until slightly firm and golden brown on top. Allow to cool completely before serving.
