Mango-Peach Preserves

Capture summer's ripe essence with mango-peach preserves, a simple blend of 4 sun-soaked ingredients packed in a can.
Ingredients:
  • 7 ripe unpeeled peaches, pitted and coarsely chopped
  • 3 cups chopped fresh mango
  • 2.75 cups white sugar
  • 1 (1.75 ounce) package powdered fruit pectin
Instructions:
  • In a large saucepan, crush half of the peaches until mostly mashed. Add the rest of the peaches and mangos. Bring to a gentle boil over medium-low heat and simmer until thickened, about 20-30 minutes.
  • Transfer the peach-mango mixture back into the pan, keeping 5 1/4 cups for a regular consistency or 5 cups for a thicker one. Mix in the sugar and bring it to a boil over medium heat. Slowly incorporate the pectin and bring it back to a boil. Let it boil for 1 minute, then promptly remove from the heat.
  • Fill hot, sterilized jars with preserves, leaving 1/4 inch of space at the top. Remove air bubbles by running a clean knife or thin spatula along the insides of the jars. Clean the rims with a moist paper towel, then seal with lids and rings.
  • Set up a large canning pot with a rack on the bottom filled halfway with water. Bring it to a boil, carefully lower jars into the water, making sure they are 2 inches apart. Add more boiling water to cover the jars by at least 1 inch. Bring the water back to a rolling boil, cover the pot, and process for 5 minutes.
