Strip Steaks with Mango-Peach Salsa

Succulent jerk-seasoned beef steak topped with refreshing mango-peach salsa - ready in just 30 minutes!
Ingredients:
  • 1/4 cup finely chopped red bell pepper
  • 2 teaspoons finely chopped seeded jalapeño chilies
  • 1 teaspoon finely chopped or grated gingerroot or 1/4 teaspoon ground ginger
  • 1/4 cup peach preserves
  • 1 tablespoon lime juice
  • 1 small mango, chopped (1 cup)
  • 4 beef boneless New York strip steaks (about 1 1/2 pounds)
  • 1 to 2 teaspoons Caribbean jerk seasoning
Instructions:
  • Combine bell pepper, chilies, and gingerroot in a medium bowl. Add preserves, lime juice, and mango, then mix well.
  • Preheat the oven to broil. Coat both sides of the beef with jerk seasoning and place on a rack in a broiler pan. Broil the beef 4 to 6 inches from the heat for 6 to 10 minutes, flipping halfway through, until cooked to your liking. Serve with salsa mixture.
