Spicy fruit-infused beef steaks - a fiesta on your plate!
Ingredients:
  • 1/2 cup peach preserves
  • 1/4 cup lime juice
  • 1 chipotle chile in adobo sauce (from 7-oz can), seeded, chopped
  • 1 teaspoon adobo sauce (from can of chiles)
  • 2 tablespoons chopped fresh cilantro
  • 8 boneless beef strip steaks, 1 inch thick (about 3 lb)
  • 1 teaspoon garlic-pepper blend
  • 1/2 teaspoon ground cumin
  • 4 peaches, halved, pitted, if desired
  • Cilantro sprigs, if desired
Instructions:
  • Prepare grill for direct heat. In a small saucepan, gently heat preserves, lime juice, chile, and adobo sauce until preserves are melted, stirring occasionally. Add chopped cilantro and remove from heat.
  • Season each beef steak generously with a flavorful blend of garlic, pepper, and cumin, and then sprinkle with salt. Grill the beef over medium heat for 15 to 18 minutes for a perfect medium doneness. Remember to turn the steaks occasionally and brush the top with a sweet preserves mixture in the last 2 minutes of grilling. For a delicious twist, grill peach halves in the last 2 to 3 minutes until warmed through.
  • Bring the remaining preserves mixture to a boil and stir for 1 minute. Serve over beef and peaches, garnish with cilantro sprigs.
