Christmas must-have: Maple roasted carrots.
Ingredients:
  • 3 bunches Dutch carrots, trimmed, peeled, or 500g baby carrots, peeled, halved lengthways
  • 25g butter, chopped
  • 60ml maple syrup
  • 35g hazelnuts
Instructions:
  • Preheat your oven to 180°C and line a large baking tray with baking paper. Spread the carrots out in a single layer on the tray.
  • Dust carrots with butter and generously drizzle with maple syrup. Roast, turning occasionally, for 30 mins or until the carrots are tender and caramelized. Season to taste.
  • Generously scatter the chopped hazelnuts on top of the carrots.
