Homemade Maple Curry Chicken with yellow bell pepper for a restaurant-worthy dish at home.
Ingredients:
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 0.5 cup yellow bell pepper, diced
  • 1 teaspoon white sugar
  • 0.25 cup maple syrup
  • 2 tablespoons curry paste
  • 1.25 cups chicken broth
  • 0.5 cup heavy cream
  • 4 skinless, boneless chicken breast halves - cut into bite-size pieces
  • 3 tablespoons cream cheese
Instructions:
  • In a large skillet over medium-high heat, combine butter and olive oil. Sauté onion, garlic, and yellow pepper until soft and fragrant.
  • Sprinkle sugar over onion mixture and cook for one minute. Pour in maple syrup and cook for another minute. Stir in curry paste and cook for an additional minute. Add chicken broth and cream. Bring to a gentle boil, then simmer on medium-low heat for 15 minutes.
  • While the chicken is cooking, stir it into the sauce and simmer for a total of 10 minutes. Add cream cheese and simmer for an additional 5 minutes.
