Maple curry infused chicken and vegetables over penne pasta for a delicious twist on a classic dish.
Ingredients:
  • 2 cups penne pasta, or to taste
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 0.5 cup chopped onion
  • 0.5 cup sliced fresh mushrooms
  • 0.5 cup chopped bell pepper
  • 0.5 cup pure maple syrup
  • 1 teaspoon white sugar
  • 6 ounces cooked skinless, boneless chicken breast, cut into bite-size pieces
  • 1.5 cups heavy whipping cream
  • 2.5 tablespoons curry powder
Instructions:
  • Bring a large pot of salted water to a boil, then add penne. Cook for about 11 minutes until al dente, stirring occasionally. Drain the pasta.
  • In a deep skillet over medium-high heat, combine oil and butter until sizzling. Cook onion, mushrooms, and bell pepper until tender, about 5 to 10 minutes.
  • Combine maple syrup, garlic, and sugar with the onions and simmer gently until it turns golden and thickens, about 5 minutes. Stir in chicken, cream, and curry powder until warmed and the sauce thickens, 7 to 10 minutes. Serve the flavorful sauce over penne pasta.
