Maple southern spiced self-glazed ham

Elevate your Christmas ham with a sweet, Southern flair.
Ingredients:
  • 168.75 gm maple syrup
  • 5.00 gm Paprika Ground
  • 2 tsp Garlic Powder
  • 1 tsp Oregano Leaves
  • 1 tsp Onion Powder
  • 8kg whole leg of ham
  • 2 corn cobs, husks and silk removed
  • 18.20 gm extra virgin olive oil
  • 2 tomatoes, finely chopped
  • 1 mango, finely chopped
  • 2 green onions, sliced
  • 42.00 gm lime juice
  • 62.50 ml fresh coriander leaves
Instructions:
  • Preheat your oven to 220C (200C fan-forced).
  • Mix together the maple syrup, 3/4 cup of water, paprika, garlic powder, oregano, and onion powder in a small bowl. Season with salt and pepper to taste.
  • Carefully remove the ham rind by cutting around the shank with a small sharp knife. Wrap the shank in foil and place it top-side down in a deep-sided baking dish. Pour the glaze over the ham and bake for 40 minutes.
  • - Take the ham out of the oven and lower the temperature to 200C/180C fan-forced. - Flip the ham gently and coat it with the glaze from the dish. - Pour 3/4 cup of water into the baking dish without wetting the ham directly. - Roast for another 30 to 40 minutes until golden, adding some water to the dish if the glaze is sticking.
  • Heat a medium frying pan over medium-high heat. Add corn and brush with oil. Cook for 6 to 8 minutes until charred all over. Let it cool for 10 minutes, then remove kernels from corn using a small sharp knife. Combine corn with tomato, mango, onion, lime juice, and coriander in a bowl. Season with salt and pepper, then mix well.
  • Arrange the ham on a beautiful serving platter and accompany it with salsa and the remaining delicious pan juices.
