Maple-roasted pumpkin and apple: a flavorful, oil-free delight!
Ingredients:
  • 1/2 small (about 750g) Kent pumpkin
  • 40g butter, melted
  • 3 Pink Lady apples
  • 54.00 gm pure maple syrup
Instructions:
  • Preheat the oven to 180°C. Cut the pumpkin into 8 wedges, deseed, and then cut each piece in half crossways. Transfer the pumpkin to a large bowl, add two-thirds of the butter, and toss to combine. Spread the pumpkin on a large baking tray and bake in the oven for 10 minutes.
  • Cut each apple into 8 wedges, removing the core. Place the apple wedges in a large bowl and add the rest of the butter. Mix everything together until well combined.
  • Arrange the apple alongside the pumpkin on a baking tray and bake for an additional 30 minutes.
  • Lower oven temperature to 170°C. Drizzle maple syrup over the pumpkin and apple, ensuring they are evenly coated. Bake for an additional 10 minutes, flipping halfway, until golden and tender.
