Embrace the fall season with maple syrup-infused cupcakes made with Betty Crocker® spice cake mix, topped with a decadent maple walnut topping.
Ingredients:
  • 1 box Betty Crocker™ Delights Super Moist™ Spice Cake Mix
  • Water, vegetable oil and eggs called for on cake mix box
  • 1/4 cup real maple or maple-flavored syrup
  • 1 1/2 cups chopped walnuts
  • 1 container (8 oz) mascarpone cheese, softened
  • 1 package (8 oz) cream cheese; softened
  • 3 cups powdered sugar
  • 1 teaspoon maple flavor
Instructions:
  • Preheat oven to 350°F and line 24 regular-size muffin cups with paper baking cups.
  • Combine cake mix, water, oil, and eggs in a large bowl. Use an electric mixer to blend on low speed for 30 seconds, then switch to medium speed for 2 minutes. Fold in syrup and 1 cup of chopped walnuts. Distribute batter evenly into muffin cups.
  • Bake for 15 minutes or until a toothpick inserted in the center comes out clean. Let it cool for 10 minutes then remove from pans onto cooling racks and let it cool completely.
  • In a medium bowl, whip together mascarpone cheese, cream cheese, powdered sugar, and maple flavor using an electric mixer. Start on low speed until blended, then switch to high speed until frosting becomes smooth and spreadable. Frost the cupcakes and top them off by evenly sprinkling the remaining 1/2 cup of chopped walnuts.
