Maple-Ginger Squash

Delight in this quick and flavorful squash side dish.
Ingredients:
  • 1 large acorn squash (2 lb)
  • 1/4 teaspoon salt
  • 2 tablespoons maple-flavored syrup
  • 2 teaspoons butter or margarine, melted
  • 1 teaspoon finely chopped gingerroot or 1/4 teaspoon ground ginger
Instructions:
  • Preheat the oven to 400°F. Cut the squash into quarters lengthwise and remove the seeds and fibers. Place the squash, cut side up, in a 13x9-inch glass baking dish. Sprinkle with salt and then drizzle the remaining ingredients mixture over the squash.
  • Bake until tender, approximately 45 minutes.
