Elevate baked tots with flavorful and spicy mapo tofu using ground pork, doubanjiang, and Sichuan peppercorns.
Ingredients:
  • 1.25 pounds frozen bite-sized potato nuggets (such as Tater Tots®)
  • 2 tablespoons vegetable oil
  • 0.125 teaspoon salt
  • 2 tablespoons Sichuan peppercorns
  • 0.5 pound ground pork
  • 0.5 cup chopped onion
  • 1.5 tablespoons chopped red chile peppers, divided
  • 1 tablespoon grated garlic
  • 1 tablespoon grated fresh ginger
  • 1 cup chicken stock
  • 3 tablespoons Chinese cooking wine (Shaoxing wine)
  • 2 tablespoons fermented bean paste (doubanjiang)
  • 2 tablespoons soy sauce
  • 1 (8 ounce) container firm tofu, cubed
  • 1 teaspoon cornstarch
  • 1 teaspoon water
  • 1 tablespoon chopped green onion, or to taste
Instructions:
  • Preheat your oven for perfectly crisp tots at 450 degrees F (260 degrees C). Lay tots on a baking sheet, then coat with 1 tablespoon of oil and a sprinkle of salt for an irresistible flavor.
  • Place the tots in the preheated oven and bake for 15 minutes. Flip them over and bake for an additional 5 to 10 minutes until they are crispy and hot.
  • Grind half of the peppercorns into a powder. Heat 1 tablespoon of oil in a large skillet over medium heat. Add the remaining whole peppercorns and cook until the oil is infused, about 5 minutes. Discard the whole peppercorns.
  • Turn up the heat to medium-high and add the pork, onion, and 1 tablespoon of chiles to the skillet. Stir well to break up the meat and cook until the pork is lightly browned and fully cooked, which should take about 5 minutes.
  • Add garlic and ginger, let them sizzle for a minute. Pour in chicken stock, wine, bean paste, soy sauce, and ground peppercorns. Gently introduce tofu and let everything mingle until slightly thickened, about 10 to 15 minutes.
  • Combine cornstarch and water in a small bowl, then slowly stir into the tofu. Simmer until thickened, approximately 2 minutes.
  • Transfer the tots onto a serving platter. Spoon the flavorful tofu mixture over the tots. Finish by sprinkling with fresh green onion and the rest of the red chile peppers for a pop of color and flavor.
