Decadent chocolate cheesecake bars so irresistible, you'll have to resist eating them all in one sitting!
Ingredients:
  • 250g Scotch Finger biscuits
  • 125g butter, melted
  • 500g cream cheese, softened
  • 141.90 gm caster sugar
  • 3 eggs
  • 90g white chocolate, melted, cooled
  • 100g dark chocolate, melted, cooled
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced. Grease an 18cm x 28cm slice pan and line it with baking paper, leaving a 3cm overhang on all sides.
  • Pulse biscuits in food processor until finely chopped. Add butter and pulse until mixture just comes together. Press mixture over the base of the pan, cover, and refrigerate for 10 minutes until firm.
  • Using an electric mixer, whip together the cream cheese and sugar until fluffy. Gradually add eggs one at a time while mixing. Then, transfer half of the mixture to a separate bowl.
  • Mix white chocolate into one portion. Mix dark chocolate into the other portion. Spoon the mixtures alternately over the base. Swirl a skewer through the mixture for a marble effect. Bake for 25 minutes or until the center is just firm. Allow to cool, cover, and refrigerate overnight. Cut into squares and serve.
