Marinated bonito

Ingredients:
  • 1 bonito, skinned, boned and cut into fillets (or 300-400g fish fillet) (see Notes)
  • 42.00 gm soy sauce
  • 40.00 ml sake (cooking rice wine)
  • 1 clove garlic, grated
  • 5cm knob ginger, grated
  • 2 tomatoes (optional)
  • 1 coriander, to garnish
Instructions:
  • Combine the soy sauce, sake, garlic, and ginger, then let the fish fillets soak in the flavorful marinade for 10-15 minutes.
  • Place the fish on a paper towel to absorb excess moisture. Lightly coat the fish with cornflour and pan-fry in a little oil until golden brown on both sides. Remove from heat.
  • Add thinly sliced tomatoes and the remaining marinating sauce to the pan. Simmer until the sauce reduces and thickens.
  • Plate the dish and sprinkle coriander for an extra burst of flavor, if desired.
