Marinated mixed capsicums

Roasted capsicums with a tangy caper twist.
Ingredients:
  • 4 large mixed capsicums (such as red and yellow)
  • 9.20 gm olive oil
  • 20.00 ml baby capers, rinsed, drained
Instructions:
  • Preheat the oven to 180°C. Toss capsicum with oil in a large baking dish. Roast for 50 minutes, turning halfway, until charred. Let cool, then peel and seed capsicums. Cut into 2cm-thick strips.
  • Transfer the capsicum along with its juices to a serving bowl. Mix in the capers until evenly distributed. Season with pepper to taste.
