Simmer mushrooms and bell pepper in a tangy herb-infused red wine vinegar sauce.
Ingredients:
  • 0.5 cup red wine vinegar
  • 0.33333334326744 cup water
  • 2 tablespoons corn oil
  • 1 tablespoon chopped onion
  • 1 tablespoon chopped fresh parsley
  • 0.5 teaspoon dried basil
  • 2 cloves garlic, minced
  • 0.25 teaspoon fresh ground black pepper
  • 2 (16 ounce) packages fresh mushrooms, stems removed
  • 0.5 red bell pepper, diced
Instructions:
  • In a pot, mix vinegar, water, oil, sugar, onion, parsley, basil, garlic, salt, and pepper. Bring to a boil. Add mushrooms and red bell pepper and simmer until mushrooms are tender, 5 to 10 minutes. Let cool to room temperature, then refrigerate covered for at least 4 hours before serving.
