Marinated olives, spiced almonds & caperberries

Ingredients:
  • 250g large green olives
  • 80ml (1/3 cup) extra virgin olive oil
  • 2 garlic cloves, thinly sliced
  • 20.00 ml balsamic vinegar
  • 1 tsp finely grated lemon rind
  • 1/4 tsp dried chilli flakes
  • Caperberries, to serve
  • 18.20 gm extra virgin olive oil
  • 250g blanched almonds
  • 4.80 gm sea salt flakes
  • 1.25 gm ground paprika
Instructions:
  • Combine olives, oil, garlic, vinegar, lemon rind, and chili in a large bowl. Cover with plastic wrap and let sit for 30 minutes to enhance the flavors.
  • For the spiced almonds, warm oil in a large frying pan over medium heat. Cook almonds, stirring, for 3-4 minutes until golden and aromatic. Remove from heat and transfer to a heatproof bowl using a slotted spoon. Add sea salt flakes and paprika, stir well to coat the almonds, and let cool for 20 minutes.
  • Separate the olives and almonds into individual serving dishes.
