Korean-inspired Philly cheese steak with kimchi-infused onions and peppers, topped with melted cheese.
Ingredients:
  • 0.75 pound top round beef, thinly sliced
  • 0.5 cup Kalbi-style steak marinade, or as needed
  • 2 tablespoons oil, divided
  • 2 cups chopped onions
  • 1 cup diced jalapeno peppers
  • 0.5 cup chopped kimchi
  • 1 cup shredded American cheese
  • 0.25 cup mayonnaise
  • 4 sandwich rolls, split and toasted
Instructions:
  • Combine the beef with the marinade in a bowl and let it marinate.
  • In a skillet over medium-high heat, saute onions in 1 tablespoon of oil until they are lightly golden but still firm, which should take about 5 to 10 minutes.
  • In a skillet over medium-high heat, warm 1 tablespoon of oil. Saute the jalapeno peppers until lightly golden for about 5 minutes. Combine them with the onions. Fold in the kimchi and cook until heated through for 2 to 3 minutes. Remove the skillet from the heat.
  • In a hot skillet, cook the steak until browned and fully cooked, stirring constantly for about 5 minutes.
  • Add a generous portion of the kimchi mixture back into the skillet on medium heat, then mix in a quarter cup of creamy American cheese. Cover the skillet and let it heat until the cheese is ooey-gooey and melted, which should take about 2 to 3 minutes.
  • On the bottom half of one roll, generously slather 1 tablespoon of mayonnaise, then pile on 1/4 of the beef. Add a layer of the delicious kimchi-cheese mixture and finish off with the top half of the roll. Repeat this mouthwatering process three more times to make a total of four scrumptious sandwiches.
