Irresistible Mars bar cheesecake by chef scarletbegonias.
Ingredients:
  • 250g plain chocolate biscuits
  • 150g butter, melted
  • 32.00 gm brown sugar
  • 20g butter, extra
  • 300ml Thickened Cream
  • 50g milk eating chocolate, chopped finely
  • 9.00 gm gelatine
  • 60ml water
  • 250g cream cheese
  • 110g caster sugar
  • 53g mars bar
Instructions:
  • Pulse biscuits in a blender or food processor until they reach a fine breadcrumb texture. Add butter and process until mixture is just combined. Press the biscuit mixture evenly onto the base and sides of a 20cm springform tin placed on a tray. Refrigerate for approximately 30 minutes or until firm.
  • While you wait, whip up a delectable butterscotch sauce by mixing brown sugar, extra butter, and 2 tablespoons of cream in a small saucepan. Stir over low heat until the sugar completely dissolves.
  • In a small saucepan, melt the chocolate with 2 tablespoons of cream over low heat, stirring until smooth.
  • In a small heatproof jug, gently sprinkle gelatine over 1/4 cup of water. Place the jug in a small saucepan with simmering water and stir until the gelatine completely dissolves. Allow it to cool for 5 minutes before using.
  • In a medium bowl, use an electric mixer to blend cream cheese and caster sugar until smooth. In another bowl, beat the remaining thickened cream with a mixer until soft peaks form.
  • Combine the gelatine mixture with the cream cheese mixture and chopped Mars Bars. Gently fold in the cream.
  • Alternate layering the cream cheese mixture and the butterscotch and chocolate sauces into the crumb crust, then use a skewer to create a visually appealing marbled effect by gently swirling the mixtures together. Repeat this process with the remaining ingredients for a beautifully marbled dessert.
  • Chill the cheesecake in the refrigerator until firm, approximately 3 hours.
