Mars Bar melt cake recipe

One pot Mars bar cake with chewy pockets. Freezes perfectly for 3 months.
Ingredients:
  • 100g butter, chopped
  • 8 x 47g pkts Mars Bars, halved lengthways, coarsely chopped
  • 2 eggs, lightly whisked
  • 150g (1 cup) self-raising flour
Instructions:
  • Preheat your oven to 180C/160C fan forced. Lightly grease a 20cm square cake pan and line the base with baking paper, leaving two sides to overhang.
  • In a saucepan over medium-low heat, melt the butter until the base is covered. Add three-quarters of the Mars Bars and stir until melted with a few lumps remaining. Use a balloon whisk to make it smooth. Let it sit for 5 minutes to cool slightly before using.
  • Whisk the eggs into the chocolate mixture until combined. Stir in the flour until evenly mixed. Pour the batter into the prepared pan and sprinkle with the remaining Mars Bars. Bake for 30 minutes or until just set. Let it cool completely in the pan before cutting into squares to serve.
